The Science of Fermentation
Fermented foods and beverages are found around the world, exciting palates and defining cultures. This workshop will explore the diversity of fermented foods. We will compare and discuss different types of fermentation, examine the process of fermentation, and discuss the products of this exciting biological transformation. This workshop will be a mix of lecture and hands-on. Students will make kimchi and a sourdough starter in the class.
